Full of nuts, flakes, soft middles and a little whipped cream…
Single Layer Pie Crust (use premade or make your own)
8 ounce package of softened cream cheese
1/4 Cup sugar
1/2 Cup Pumpkin Pie Filling
1 Egg (room temp)
2/3 Cup Dark Corn Syrup
2/3 Cup Sugar
1 Tablespoon Melted Butter
1 Teaspoon Vanilla Extract
1 Cup Whole Pecans
Preheat oven to 350. Add crust to pie pan, crimp or flute edges as desired.
Beat the cream cheese until creamy. Add sugar & beat again. Add pumpkin pie filling and beat until creamy. Add the egg and beat until creamy. Spread the mixture in the bottom of the pie crust.
Whisk together the corn syrup, sugar, eggs, butter, and vanilla. Add the pecans and stir gently to coat. Gently pour on top of the cheesecake layer.
Place the pie dish on a cookie sheet (don’t skip this step, it can bubble over easily) Cover the pie crust edge gently with foil or use a pie guard. Bake for about one hour. Remove and cool, then refrigerate until chilled.
Serve with whipped cream
