WAITRESS Pie Contest: Gimme Some Sugar Cream Pie

(Gimme Some) Sugar Cream Pie

Ingredients:

1 ½ cups half and half
½ cup milk
1 cup sugar
¼ cup cornstarch
1 stick butter
1 tsp vanilla
1 egg
Dash of salt

Garnish:
1 tsp pumpkin pie spice
1 tsp sugar

Directions:

In a medium bowl, beat egg until thick and lemony.  Set aside.  In a good size pot—3 quart is what I use—mix cornstarch, sugar, and salt.  Pour in milk and half and half and mix until combined.  Heat on medium heat until boiling, stirring constantly.  Boil and continue to stir for two minutes.  Remove from heat.  While stirring the egg, pour a cup of the boiled milk mixture into the bowl with the egg by pouring the boiled milk mixture very slowly against the side of the bowl.  This will prevent your egg from scrambling.  Pour the egg and milk combination back into the pot, and reboil over medium heat, stirring constantly.  Boil and stir for another two minutes.   Remove from heat.  Add butter and vanilla and mix well.  Pour the contents of the pot into a 9 inch crust of your choice…graham cracker perhaps (might be a bit on the sweeter side though) or a regular pre-baked crust.  Mix sugar and pumpkin pie spice in a separate bowl and sprinkle on top of the hot pie.  Cover with plastic wrap, pressing wrap against the top of the pie.  Refrigerate until firm, then slice a piece for the one you want to impress.    If the pie works its magic, they’ll say “Gimme some sugar!” and leave off the “cream pie” part!  Don’t be disappointed though if they ask for a second slice instead.  It’s pretty good pie after all…
