Surprise Inside Pie

In response to Jenna finding out she was unexpectedly pregnant, she might bake this Surprise Inside Pie.  On the outside, it looks unassuming.  But, when you cut into it, it is full of magical colors and sprinkles!

Crust:
2.5 cups of graham cracker crumbs
1/2 cup brown sugar
1/3 cup rainbow sprinkles
1 stick butter, melted
1 egg white, beaten
Filling:
1 1/2 cups white chocolate chips
1/2 cup heavy cream
1/2 cup powdered sugar
8 oz cream cheese, softened
8 oz cool whip
extra cool whip for topping
For crust:
Mix graham cracker crumbs with brown sugar and sprinkles.  Drizzle melted butter over the mixture and stir until combined.  Add beaten egg white and mix well.  Press crust mixture into the bottom and up the sides of a 9″ springform pan.  Bake at 250 degrees for 15-20 minutes.  Cool.
For filling:
In a microwave safe bowl, melt white chocolate chips and heavy cream in 30 second intervals until just melted, stirring each time.  The mixture should be just melted.
In a large mixing bow, add cream cheese and powdered sugar.  Mix on medium speed until very smooth.  Add melted white chocolate and cream mixture.  The mixture will be slightly warm.  Do not let it cool.  Fold in cool whip.
Divide the filling into four bowls.  Color each bowl with your preferred color.  Drop by spoonfuls into the prepared crust, alternating colors around the bottom.  When all the filling has been added, swirl through lightly with a knife.  Add additional cool whip and sprinkles on top if desired.  Chill for at least 4 hours before serving.
