Preheat oven to 350 degree F.
Boil sweet potatoes on the stove in a large pot for an hour or till the skin cracks. When done, drain the water and let cool. Peel the skin off, transfer to a large bowl, and mash very well. Set aside.
In the mixer, beat butter and brown sugar until creamy. Scrape the bowl and add eggs, vanilla, cinnamon, nutmeg, and allspice. Mix for a minute and then add the sweet potatoes. Mix and slowly pour evaporated milk into the batter. Make sure batter is smooth and pour into an unbaked pie shell.
Bake on bottom rack of oven for 1 hour or until center of pie is firm.
